Amazing Fried Chicken Meatballs stuffed with Gorgonzola Cheese and Spinach

This recipe I will admit was a “well we don’t have anything else to eat so lets just throw it in a bowl and see what happens kind of night.” This fried chicken meatball is hit for everyone in my house, If you don’t┬álike Gorgonzola, it tastes amazing with Mozzarella, cheddar cheese, you name it. Just swap out the cheese and let the magic happen.

Ingredients

  • 2 pounds Ground Chicken
  • 2 tablespoons Creole Seasoning
  • 1 tablespoon Italian Seasoning
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic Powder
  • 1/4 cup *Plain* Bread Crumbs
  • 3 eggs whisked
  • Breadcrumbs
  • Parmesan Cheese
  • 1/2 cup Gorgonzola
  • 1/2 cup Sauteed spinach

Instructions

  1. In a large bowl, blend ground chicken, creole seasoning, Italian seasoning, paprika, and garlic powder.
  2. Using an ice cream scoop, scoop out 2 servings to form each meatball.
  3. Roll the meatball into a ball and then flatten. In the middle, place sauteed spinach and then gorgonzola on top. Fold meat in half, sealing the cheese and spinach in and roll back into a ball.

  5. Repeat and Place Meatball in the freezer for 15 minutes on a cookie sheet.
  6. In a cast iron skillet, add vegetable oil and bring oil up to medium high heat.
  7. After you have removed the meatballs from the freezer, dip each meatball in your egg coating and then coat with breadcrumbs and into the hot skillet.
  8. Repeat and fry each meatball until golden brown.
  9. Serve with Mac & Cheese or other saucey dishes
